Descripción
TAS2R4 is a bitter taste receptor found on the tongue and involved in the perception of bitter flavors. This receptor is activated by various bitter compounds, particularly those that belong to the group of glucosinolates found in cruciferous vegetables, such as cabbage, broccoli, and Brussels sprouts. When TAS2R4 is activated by these bitter ligands, it triggers signaling pathways inside taste receptor cells that lead to the sensation of bitterness. The activation of TAS2R4 serves as part of the body’s protective mechanism against the ingestion of potentially harmful substances, as many bitter compounds are toxic or bitter-tasting due to their chemical composition. The sensitivity to specific bitter compounds detected by TAS2R4 can vary among individuals due to genetic variations, influencing food preferences and overall taste perception. TAS2R4 research has implications for improving food acceptance and developing interventions for dietary behaviors linked to bitter tastes.
