Descripción

TAS1R1 is a member of the type 1 taste receptor family, which is involved in the detection of specific taste stimuli. This receptor is primarily responsible for sensing umami, the taste associated with amino acids, particularly L-glutamate, which is commonly found in proteins and savory foods. TAS1R1 is expressed in taste receptor cells on the tongue and works together with other receptors, such as TAS1R3, to form a heterodimeric receptor complex that can detect umami flavors. When TAS1R1 is activated by its ligands, it activates intracellular signaling pathways that send signals to the brain, contributing to the sensation of taste. TAS1R1 is also involved in the regulation of food intake, as umami flavors are often associated with nutrient-rich foods. Dysregulation of TAS1R1 signaling has been linked to changes in food preference, dietary habits, and the regulation of appetite.
