Descripción
TAS2R1 is part of the type 2 taste receptor family, responsible for detecting bitter tastes. It is activated by specific bitter compounds, such as alkaloids and other plant-derived chemicals. TAS2R1 is expressed in taste receptor cells located on the tongue, particularly in regions associated with the perception of bitterness. When activated by bitter molecules, TAS2R1 triggers intracellular signaling cascades through G-protein coupled receptor pathways, leading to the sensation of bitterness. This receptor plays an important role in protecting the body from potentially harmful or toxic substances, as many bitter compounds are associated with plant toxins. Genetic variations in TAS2R1 influence individual sensitivity to bitter tastes and may affect food preferences. Individuals with heightened sensitivity to bitter compounds due to TAS2R1 variations may have a more pronounced aversion to certain vegetables and other bitter foods.
