Taste Receptor Type 2 Member 140 (TAS2R140) plays a pivotal role in the detection of bitter compounds, serving as part of the body’s defense mechanism to prevent the ingestion of harmful or toxic substances. Located predominantly in the taste buds of the tongue, TAS2R140 activates upon binding to specific bitter ligands, initiating a cascade involving G-protein gustducin and subsequent calcium ion signaling that transmits the perception of bitterness to the brain. Additionally, TAS2R140 has been found in extra-oral tissues, including the respiratory tract and gastrointestinal system, where it may regulate immune responses or modulate smooth muscle activity in response to bitter stimuli.
